This is our favorite recipe for poblano and onion hash browns. This is a dish you can easily improvise with and add your own flare to make it your own. Everyone we’ve made this for absolutely loves it!

What You’ll Need

  • 2 medium baking potatoes, peeled and shredded
  • 1/2 medium onion, diced
  • 1 poblano pepper, diced
  • 2 Tbsp. oil
  • 1 Tbsp. chili powder, or to taste
  • Salt and pepper, to taste

Preparation and Cooking

  1. Soak the shredded potatoes in cold water for about 30 minutes. Drain and pat dry with paper towels, removing as much moisture as possible.
  2. In a large bowl, combine the shredded potatoes, onion, and poblano pepper and stir.
  3. Place a large, heavy skillet over medium-high heat and add the oil. Once hot, add the potato mixture, sprinkle with half the chili powder and cook until the bottom begins to brown (about 5 to 7 minutes).
  4. Flip over, or stir, the hash browns. Add the remaining chili powder and cook for an additional 5 to 7 minutes. Once desired crispiness is achieved, season with salt and pepper, if desired, and serve.

An emission nebula is a nebula formed of ionized gases that emit light of various colors. The most common source of ionization is high energy photons emitted from a nearby hot star. Among the several different types of emission nebulae are H II regions, in which star formation is taking place and young, massive stars are the source of the ionizing photons; and planetary nebulae, in which a dying star has thrown off its outer layers, with the exposed hot core then ionizing them.

Usually, a young star will ionize part of the same cloud from which it was born although only massive, hot stars can release sufficient energy to ionize a significant part of a cloud. In many emission nebulae, an entire cluster of young stars is doing the work.The nebula’s color depends on its chemical composition and degree of ionization. Due to the prevalence of hydrogen in interstellar gas, and its relatively low energy of ionization, many emission nebulae appear red due to the strong emissions of the Balmer series.

The Pacific Northwest, sometimes referred to as Cascadia, is a region in western North America bounded by the Pacific Ocean to the west and, loosely, by the Rocky Mountains on the east. Though no agreed boundary exists, a common conception includes the U.S. states of Oregon and Washington and the Canadian province of British Columbia. Broader conceptions reach north into Alaska and Yukon, south into far Northern California and east into Idaho and Western Montana, western Wyoming, and western Alberta, to the Continental Divide. Narrower conceptions may be limited to the Northwestern U.S. or to the coastal areas west of the Cascade and Coast mountains. The variety of definitions can be attributed to partially overlapping commonalities of the region’s history, geography, society, and other factors.

The Northwest Coast is the coastal regions of the Pacific Northwest and the Northwest Plateau (also commonly known as “The Interior” in British Columbia and the Inland Empire in the United States) is the inland regions. The term “Pacific Northwest” should not be confused with the Northwest Territory (also known as the Great Northwest, a historical term in the United States) or the Northwest Territories of Canada.

The region’s largest metropolitan areas are Greater Seattle, Washington, with 3.7 million people; Greater Vancouver, British Columbia, with 2.4 million people; and Greater Portland, Oregon, with 2.3 million people.

A key aspect of the Pacific Northwest is the US–Canada international border, which the United States and the United Kingdom established at a time when the region’s inhabitants were composed mostly of Indigenous peoples. The border  in two sections, along the 49th parallel south of British Columbia and the Alaska Panhandle west of northern British Columbia  has had a powerful effect on the region. According to Canadian historian Ken Coates, the border has not merely influenced the Pacific Northwest rather, “the region’s history and character have been determined by the boundary”.

Keeping it Simple

Over the past few months, the concepts of stripping back the superfluous, simplifying and pulling apart the true meaning of integrity have been strong personal themes. For many people, there’s a drive to again inspect old patterns that continue to run happily in the background despite years of self-examination. Perhaps under the direction of a new global energy, there’s a sense of being able to lovingly let go of those things that have served us all well on one level, yet have offered excuses to stay small on another.

I came across Don Miguel Ruiz’ “The Four Agreements” the other day and it strongly resonated with this desire to pare back; to simplify; to become more real as a participant in this world and begin operating in a more authentic way.
